Hey friends! I’m running a little short on time today, but I wanted to pop in really quickly with another What I Ate Wednesday! What’s the point of taking pictures of everything you eat if you’re not going to share them, amiright?

Thanks to Jenn for hosting the linkup, as always! Here’s a peek at what I ate Wednesday yesterday.


I’m still going strong on the oatmeal and two ingredient pancakes! I alternate between the two pretty much every day, but if I had to pick a favorite I’d probably choose the “pancake,” at least in these hotter summer months. (Speaking of hot- what’s with this WEATHER?! Bleh!)


I eat both the oatmeal and the pancake with either all natural peanut butter or almond butter, so I think it’s safe to say I am consistently getting my healthy fats in at breakfast time. What can I say? I think I have a nut addiction. I am seriously in love with pretty much any nut or nut product, and I don’t mind my addiction one bit! 🙂 (And what kind of healthy living blogger would I be if I did? Lol).

I do need to step up my game though and try some of these lower calorie peanut butter alternatives like PB2 and Wowbutter. Any suggestions out there? Do you guys have favorites?


I’m still loving my salads for lunch! The key for me is load up on the greens and go a little lighter on the other toppings, that way I can A LOT, and feel very full and satisfied after lunch.


Nom nom nom.

Here’s what I had in yesterday’s salad:

  • Baby spinach + mixed greens
  • Shredded carrots
  • Cucumber
  • Avocado
  • Turkey lunch meat
  • Feta cheese
  • Craisins

I threw it all together with a tiny amount of a homemade honey mustard dressing, since the salad was pretty tasty on its own and I really was just looking for a little flavor to coat my greens. So tasty! I’m always so sad when my giant container is empty though, haha.


At around 3:00 I ate my typical sliced apple for a snack. On the side I had a bit of Nutella that someone handed me outside of the Courthouse metro station on my way in to work, along with a $1 off coupon for Nutella. Sweet! The coupon and sample was part of Nutella’s 50th anniversary “Spread the Happy” tour, which I thought was awesome (and as a PR pro myself, I appreciated how much work probably went into this tour and was pretty impressed. Kudos, Nutella!).


I don’t think I’ve ever met someone who didn’t like Nutella (it must be the nut thing again) so I was quite a happy camper. What a great way to spice sweeten up my afternoon snack!


For dinner I made a variation of my Asian steak and mango salad, which I hadn’t had in FOREVER.


I didn’t have all the ingredients on hand for the marinade so I wound up cheating with a little teriyaki sauce, which was both easy and tasty.

On the side I had a pan de bono, which is one of the Colombian treats Fabio’s dad bought for us when we were up in NY this past weekend. It literally translates to “the good bread” so you can imagine how tasty it was 😉 I wish I could eat those little rolls every day!


After dinner I had a small slice of the blueberry cheesecake I told you all about yesterday, while watching a new-to-me show, Orange is the New Black. I’m only two episodes in but so far it’s great!

Jack was more interested in the cheesecake than the show, naturally.



Since I skipped my workout on Monday morning, I did it on Tuesday instead. Of course this kind of threw a kink into my whole workout schedule which is annoying, but I’ll make it work.

I wound up completing another one of the workouts in my Kayla Itsines eBooks, and like usual it kicked my tush! Whenever one of her circuits involves jumping lunges (30 of them in each round! Ahh!) my glutes are always super sore the next day. Yow!

Either way, I’m still loving the workouts and feeling awesome about my health and fitness these days, cheesecake and Nutella aside! 🙂

  1. I have hopped on the salad train for lunch as well-I had forgotten how yummy they are. Yours looks great! This week mine is spinach, roasted sweet potato, 1/2 avocado, grilled chicken, bell peppers, cucumbers and a little annie’s light honey mustard-keeps me going!

  2. i’ve tried PB2 before. it’s pretty good, but a far cry from the deliciousness of real PB. i’ll mix it with milk instead of water for a creamier result. it can work pretty well in smoothies!

  3. I love PB too. Almost to a fault. If it was appropriate to eat spoonfuls everyday with chocolate chips, I would. I try not to keep the big jars of JIF from Costco around but when my parents visited they just restocked me. It is hard to stay away from but I always rationalize it that it is protein and I need that.

    I recently have been using crunch almond butter from Trader Joe’s. I love using it in this breakfast, you should try it out. It is my new go to. http://www.pbfingers.com/2013/03/07/peanut-butter-oatmeal-cookie-dough-overnight-oats/

    For some reason the TJ’s Almond Butter and PB I am not tempted by to eat by the spoonful, so they are great to keep around for recipes and smoothies. But I definitely want to try PB2. Let me know if you have success with it!

    • Ah I used to have those giant Costco sized JIF jars too. They are trouble!! I’ve seen that recipe for cookie dough overnight oats and have been meaning to try it out. Thanks for the reminder!

  4. I know we haven’t met so it might not count….but I find Nutella absolutely disgusting! Just the thought of chocolate in a spread makes me feel a little sick. Definitely not a fan!

    • Wow, who knew?? Maybe I’m just so consumed by my own love obsession with chocolate that I couldn’t imagine someone wouldn’t like nutella.

  5. I don’t like Nutella at all! A bit like Heidi said, chocolate spread is not my thing – and especially not nutty chocolate spread. I’m actually not a big nut butter fan. I rarely have it… sorry don’t kill me! 😉

  6. Hey! I actually starting using PB2 in my oatmeal because like you, I have a serious nut butter addiction. I could eat a jar of almond butter by the spoonful in one sitting (who needs candy when they have almond butter!?!). I like PB2 for what it is. It does taste just like peanut butter (in my mind), but I would love to find one that tastes like almond butter.

    I don’t even make it a paste before putting it in my oatmeal. I put in the powder and the almond milk/water that I used to make the oatmeal makes it have the PB consistency. I hope this helps! Please let me know if you find any other nut butter alternative that you enjoy!

    Per Emily’s suggestion, I ordered two bags from iherb (to get free shipping! and because PB2 way wayyyy to expensive for me!) and I’ve already going through half a bag. I use 2tbsp in oatmeal like Christy describes above and love the texture and bonus protein boost. I’ve also baked a few different healthy cookies/banana pb breads using peanut flour instead of regular flour and they have been delicious. Daily Garnish and The Real Life RD have some great recipes. I also made Emily’s peanut sauce last night, served over tofu and veggies- so good!

    I also enjoyed it mixed with water to dip celery in…a favorite snack I can now enjoy with no guilt thanks to the awesome nutrition stats. I’m a vegetarian so appreciate another great source of protein without a ton of calories.

    Definitely try it; I think you’ll love it!

  8. I’m moving to DC tomorrow (!) for the summer, and I’m terrified of the weather! I’m from CA where humidity doesn’t exist, so I don’t know how I’m going to handle it!

    • Ahhh yes, that humidity is going to be a rude awakening I’m afraid. The weather actually isn’t too bad right now, but I guarantee there will be at least one week in late July/August that will make you want to die, haha. Where in DC will you be?

  9. Love nutbutters!!! I seriously cannot get enough. I’m definitely a big PB2 fan, although I’ve also really been loving plain, natural PB. Like where “peanuts” are the only ingredient. I have a bit of a problem. Also – jumping lunges are like the bane of my existence. HATE HATE HATE (/love) them!

    • Hahaha same on the HATE HATE HATE (/love) mentality! And yeah the natural PB I’m using right now has two ingredients: peanuts and salt. I love it!
