Hey friends! I’m running a little short on time today, but I wanted to pop in really quickly with another What I Ate Wednesday! What’s the point of taking pictures of everything you eat if you’re not going to share them, amiright?
I’m still going strong on the oatmeal and two ingredient pancakes! I alternate between the two pretty much every day, but if I had to pick a favorite I’d probably choose the “pancake,” at least in these hotter summer months. (Speaking of hot- what’s with this WEATHER?! Bleh!)
I eat both the oatmeal and the pancake with either all natural peanut butter or almond butter, so I think it’s safe to say I am consistently getting my healthy fats in at breakfast time. What can I say? I think I have a nut addiction. I am seriously in love with pretty much any nut or nut product, and I don’t mind my addiction one bit! 🙂 (And what kind of healthy living blogger would I be if I did? Lol).
I’m still loving my salads for lunch! The key for me is load up on the greens and go a little lighter on the other toppings, that way I can A LOT, and feel very full and satisfied after lunch.
Nom nom nom.
Here’s what I had in yesterday’s salad:
- Baby spinach + mixed greens
- Shredded carrots
- Turkey lunch meat
- Feta cheese
I threw it all together with a tiny amount of a homemade honey mustard dressing, since the salad was pretty tasty on its own and I really was just looking for a little flavor to coat my greens. So tasty! I’m always so sad when my giant container is empty though, haha.
At around 3:00 I ate my typical sliced apple for a snack. On the side I had a bit of Nutella that someone handed me outside of the Courthouse metro station on my way in to work, along with a $1 off coupon for Nutella. Sweet! The coupon and sample was part of Nutella’s 50th anniversary “Spread the Happy” tour, which I thought was awesome (and as a PR pro myself, I appreciated how much work probably went into this tour and was pretty impressed. Kudos, Nutella!).
I don’t think I’ve ever met someone who didn’t like Nutella (it must be the nut thing again) so I was quite a happy camper. What a great way to
spice sweeten up my afternoon snack!
For dinner I made a variation of my Asian steak and mango salad, which I hadn’t had in FOREVER.
I didn’t have all the ingredients on hand for the marinade so I wound up cheating with a little teriyaki sauce, which was both easy and tasty.
On the side I had a pan de bono, which is one of the Colombian treats Fabio’s dad bought for us when we were up in NY this past weekend. It literally translates to “the good bread” so you can imagine how tasty it was 😉 I wish I could eat those little rolls every day!
After dinner I had a small slice of the blueberry cheesecake I told you all about yesterday, while watching a new-to-me show, Orange is the New Black. I’m only two episodes in but so far it’s great!
Jack was more interested in the cheesecake than the show, naturally.
Since I skipped my workout on Monday morning, I did it on Tuesday instead. Of course this kind of threw a kink into my whole workout schedule which is annoying, but I’ll make it work.
I wound up completing another one of the workouts in my Kayla Itsines eBooks, and like usual it kicked my tush! Whenever one of her circuits involves jumping lunges (30 of them in each round! Ahh!) my glutes are always super sore the next day. Yow!
Either way, I’m still loving the workouts and feeling awesome about my health and fitness these days, cheesecake and Nutella aside! 🙂
