Hi friends! Happy Wednesday! How’s everyone’s week going so far? Mine is going fine, but really I just can’t wait for the weekend!
The weather is supposed to be beautiful and we finally have our Cherry Blossom 10 Miler, so that should be a lot of fun. Also one of my best friends from New York will be in town, so hopefully I’ll get to see her. Come onnnnn, Friday!
Anyway, it’s not the weekend yet, so let’s focus on today’s What I Ate Wednesday post instead. As always, thanks to Jenn for hosting the linkup!
Ok, this is a lie. I ate this breakfast on Monday.
Yesterday I had another one of Fabio’s delicious breakfast sandwiches with avocado, sriracha, cheese, and egg, but I wolfed it down and totally forgot to take a picture. Woops!
Instead you get to see my breakfast from Monday- 1/3 cup oats, 1/3 cup skim milk, 1 super ripe mashed banana, and a dash of cinnamon nuked in the microwave for about a minute and 30 seconds. Once it was light and fluffy I stirred in some Nature’s Promise natural peanut butter and added a sprinkling of dried cranberries. De-licious.
When I came into work I made myself a cup of green tea in my favorite Kate Spade mug. I am still drinking tea nearly every morning, but I have to say I don’t love the green tea at my new job as much as the Kurig kind I had at my old job.
I’m thinking moving forward I might buy some of my own tea and bring it into the office. Does anyone have any good tea recommendations? It doesn’t have to be green tea necessarily, but I do like the health benefits of drinking green tea as opposed to just regular English breakfast, for example. I’d appreciate any suggestions!
I forgot to make my lunch on Monday evening after dinner, and on Tuesday morning I was running a little late and I knew I wouldn’t have time to make my lunch then either. I then complained to Fabio about having to buy lunch, and he surprised me by packing my lunch for me. What a guy!
Included in my lunch was a turkey sandwich with mustard and Swiss cheese, along with some carrots and hummus. He totally forgot that I usually eat my sandwiches on sandwich thins, but I didn’t mind the regular bread one bit! It was so nice to have my lunch waiting for me as I got ready to head out the door 🙂
I go through phases where I love Sunsweet prunes, and then I forget all about them. Right now I’m in a loving-them-and-can’t-stop-eating-them phase.
As I’ve mentioned on CET before, they are perfect for my sweet tooth and, although they are heavy on natural sugar, are much better for you than processed candies and sweets. I have been taking them to work wrapped in tinfoil and they make great afternoon snacks. Yum!
Originally I was planning to try out a new recipe for dinner, but after a trip to the dog park after work and then arriving home a little later than usual, I just wasn’t feeling it. In order to throw something together quickly, I went to my go-to veggie bowl method.
This bowl contained spinach, brussels sprouts, sweet potatoes, potatoes, chicken sausage, 3 wedges of laughing cow cheese, and a sprinkling of each curry and garlic salt.
Dinner came together in about 25 minutes and was delicious and nutritious 🙂 I love making these kind of bowls because it’s a great way to use up produce that’s on its last legs, and it’s easy and tastes great. Always a win-win for me!
Yesterday Fabio, Jack, and I headed out for a three mile run into Georgetown. It was my first morning run in a long time where I didn’t need to wear a jacket! The sun was absolutely beautiful as it rose in the sky, and it made me even more excited for the weather to get nicer.
Great way to start my day!
