Hello there, and happy hump day! Is it the weekend yet? No? Oh well, then I guess we might as well talk about what I’ve been eating in a What I Ate Wednesday post. Not as exciting as the weekend, but still pretty fun in its own way. I for one always like seeing what other people are eating, so hopefully you do too!

Let’s take a look at my Monday, shall we?

Workout

My Monday began bright an early with a 6:00 am class at Wired Cycling. I know I’ve been talking about this place a lot lately, but that’s because I love it so much!

Monday’s class was a small group, but Jay, our instructor, did a great job of pushing us out of our comfort zone and pumping us up anyway. As usual, seeing my name ranked on the screen pushed me to pedal faster and faster, and I love that my competitive nature allows me to get a killer workout. I left dripping in sweat, once again!

I also like that Wired emails you your stats after class. I was surprised to see I biked 10.16 miles!

Breakfast #1

As soon as I got home, I drank a glass of fresh juice for my first “breakfast” of the day. This batch included tons of mixed greens (spinach and some kale mix Fabio picked up at the store), parsley (we had some that was wilting in the fridge), lemon, ginger, cucumber, green apples, celery, orange beets (so pretty!), and carrots. It wasn’t my favorite batch ever, but I still drank it all up.

Gotta’ get those nutrients in! (Jack is clearly NOT interested haha!)

Breakfast #2

Once I had showered, I dug into a bowl of Kashi Go Lean Crisp cereal with slivered almonds, blueberries, and 1% milk. The blueberries were a nice summery addition to this breakfast that I’ve been enjoying nearly every day.

Quick tangent: Although I know some people prefer to eat breakfast at work (um, almost all of my coworkers) I absolutely love eating breakfast at home. I wear a big fluffy bathrobe while I eat since I have almost always just gotten out of the shower, and I let my hair air dry a bit while I eat my breakfast and watch the Today Show. Jack is usually hovering around waiting to drink the rest of the milk from my bowl. It’s definitely a happy moment in my day, and I wouldn’t trade it for a couple more minutes of sleep or a hasty breakfast at my desk. 🙂 How about you?

Lunch

Like every day, I started getting hungry for lunch around 12:00, and by 12:15 I was digging into a delicious salad made with the same mixed greens as my juice (kale and spinach plus some other type of greens), carrots, feta cheese, Craisins, grilled corn, and curried chicken salad. My aunt CC actually sent the chicken salad home with us after our fun weekend in Otis, and it was such a delicious addition to my salad. I didn’t even need any dressing since the chicken salad was so creamy. Yum!

After eating my salad, I enjoyed a couple of tart cherries. Summer produce is just the best!

Snack

Like clockwork, I was ready for my afternoon snack at 3:30 pm (seriously, I am SUCH a creature of habit). I dug into a delicious and incredibly juicy nectarine, that was also courtesy of CC.

It was really delicious and really messy. I wound up using about three paper towels and still had to wash my hands and forearms after eating it. Sheesh! So good though.

Dinner

For dinner I made a new-to-us recipe, Zucchini Corn and Quinoa Bowls with Grilled Chicken and Lemon from Cooking Classy.

This meal turned out SO well and I am definitely going to add this into my regular rotation! I loved the sweetness from the corn combined with the salty feta and tangy lemon. I wound up cutting the recipe in half, and we still had a ton of leftovers which I’ve been adding to my salads all week. We wound up using rotisserie chicken to save time, so it was really easy too! Two big thumbs up for that recipe.

Fabio and I enjoyed our dinner while watching the season finale of Orange is the New Black. I thought the last episode was so well done, and now I’m sad that I have to wait a year to find out what happens next. Boo.

  3. I don’t usually feel like I have much to contribute to the questions but today’s are great! I’ve been so slow getting into this season of Orange. I’m trying to stretch it out like a “real TV show” but with 4th of July I lost track. As for breakfast, I was just thinking about this! I’m in Austin, TX and breakfast tacos are very popular here and I always see so many people eating at their desks. I’m like you though, my day wouldn’t be the same without breakfast with the Today anchors!

  6. Thanks for sharing, I hadn’t heard of the ‘what I ate Wednesday’ link up before, but I’ll definitely check it out! Onto your questions-we don’t have a tv set up, so no Orange here, though I’ve heard it’s pretty awesome. As for breakfast-I do 16:8IF and usually break my daily fast at around noon, with my biggest meal of the day. Before that it’s water, diet soda and tea 🙂

  7. I LOVE OITNB! I haven’t watched his season yet – I’ve been saving it 🙂 AND I always eat breakfast at work. First thing when I get there. Can’t wait precious minutes in the morning with eating at home 🙂 Those tacos look so good!

  8. I love having my breakfast at home. Mornings are my favorite time of the day and it’s so nice to sit in the quite and enjoy my favorite meal.
    I haven’t seen Orange is the New Black, but I just finished the book. Sounds like I should watch it!
