Hey there! Happy hump day! It’s been a while since I’ve written a What I ate Wednesday post, and since I always enjoy seeing what other people are eating I thought today would be a good day to bring it back. Thanks to Jenn for hosting the linkup as always!

Here’s a look at what I ate yesterday.

Breakfast #1

Yesterday’s workout took place during my lunch break (more details on that further down in the post!) so that meant I got to sleep in until almost 7:00. It was amazing! After taking Jack for a nice walk, I came inside to enjoy my first breakfast of the day: a glass of fresh juice made with beets, carrots, power greens (from Costco), cucumber, celery, green apples, and ginger.

It was another delicious batch! While we’re on the subject of juicing, I’m planning to write a follow up post about our juicing process since it’s been a while since I’ve talked about it. If you have any questions about juicing please let me know in the comments section below so I can address them in my upcoming post!

Breakfast #2

Once I was showered and was ready for the day, I dug into breakfast number two: a bowl of Kashi Go Lean Crisp cereal with 1% milk and a banana.

I picked up this cereal last time I was at Costco and I am loving it! The 9g of protein and 8g of fiber do a great job of keeping me full, and I like that it’s not as tooth-breakingly crunchy as Kashi Go Lean Crunch, which I’ve tried in the past and wound up using more as a granola than cereal.

I’ve also made the switch from skim milk to 1% after lots of encouragement from you guys! I tried switching to 2% a couple of weeks ago, but I’m just not ready for it yet (it was a little too thick for my taste, which is crazy since I used to love whole milk as a kid! It’s amazing how your tastes and preferences change over time.) Anyway, I’m trying to embrace the fuller fats, and it’s going pretty well so far.

Lunch

Yesterday’s lunch was another delicious salad! I’ve been packing these salads for my lunch for quite a while now, and I’ve noticed that as long as I switch up the mix-ins every now and again I really don’t get tired of them. Yesterday’s salad included more power greens, spinach, shredded carrots, quinoa, roasted sweet potatoes, chicken, Craisins, slivered almonds, and feta cheese. Lots of feta cheese. 😀 Plus a homemade dressing of olive oil, balsamic vinegar, mustard, salt and pepper.

Workout

My office building recently opened a gym for tenants, and yesterday I joined a few of my coworkers for a lunchtime workout! We headed down to the gym around 1:00 pm and spent a little less than an hour getting our sweat on. It was great!

My workout began with 10 minutes on the elliptical with a pretty high resistance (man, it’s been years since I’ve been on an elliptical!) and then I completed a workout from the Nike Training Club app. The Nike workout was 15 minutes and had me completing a good variety of moves from alternating jump lunges to plank jacks to staggered push ups. Phew. It was tough!

I finished up my workout with some tricep, shoulder, and bicep lifts with the free weights, and then changed back into my work clothes and got back to work.

For those of you who workout during your office lunch breaks, do you usually shower after? I’m lucky that this gym does have a shower, and I’m thinking about bringing some shower supplies to keep in a drawer at my desk to rinse off after workouts. Then again I’ve heard pretty good things about these “On the Go Towels” athletic cleansing wipes, so maybe I’ll invest in those instead? I’d love to hear your thoughts!

Snack

As usual, I got hungry around 3:30 pm and enjoyed a sliced apple with a mug of green tea. In addition to my everyday snack, I ate a dark chocolate chunk Kind bar since the lunchtime workout made me a little extra hungry.

Dinner

After work I was really craving a margarita, but when I got home I dove right into unpacking the last few boxes leftover from our move instead. I wound up getting pretty distracted by this task (I think we only have one small box of random stuff left to unpack now!) and by the time I was done I was ready to skip the marg and move right to dinner. I’ve found that sometimes when I’m craving something it’s actually just boredom, and I can kill the craving by distracting myself with another task. Does that happen to anyone else?

On the menu for dinner was a perfectly cooked steak (courtesy of chef Fabio) and some sauteed spinach and sweet potato fries (courtesy of yours truly).

So funny story about those sweet potatoes: I accidentally bought Japanese sweet potatoes from the store last week thinking they were the same as regular sweet potatoes. It turns out they are a bizarre mix of a regular potato and a sweet potato; they’re not really sweet but not really savory, and while the outside looks just like a sweet potato they are white on the inside like a regular potato. So strange! While they tasted ok, I don’t think we’ll wind up buying them again. Lesson learned.

Dessert

Before bed I was craving a little somethin’ somethin’ (just bored? maybe?) so I headed to the kitchen for a heaping spoonful of peanut butter with chocolate chips. It did the trick!

IMG_2740I love Jack’s face in this picture, since he is clearly begging for a bite. While I didn’t let him have any chocolate, I may or may not have let him lick the last dregs of peanut butter off my spoon. 😉 Who can say no to that face?!

Question of the day: What’s the weirdest produce you ever bought? Did you like it?

One time I was sent a pattypan squash in a community produce share, and I wound up making some awesome chocolate bread with it! (<– super old post, btw.)

  1. I find myself “bored eating” a lot, especially now that I’ve been on maternity leave since beginning of April, and now it’s summer break (I’m a teacher)! The baby does keep me busy, but being at home all day sure does lead to a lot of (mostly unhealthy) snacking while baby girl naps!

  2. It may not be weird, but I had my first experience with parsnips the other day. I cut them up like I would do with sweet potato fries and cooked them along side some sweet potatoes. They were delicious! Consistency like a potato but with a little sweetness and carrot-y taste.

  3. So nice that you have a gym to use during work. I was working out on my lunch break this past spring, and would do “park workouts” or go for a run around the park/neighborhood near my office. It was a great break from the day for sure! Since I didnt have access to a shower, I would bring some baby wipes, make up wipes, deodorant and a hair brush. Wipe the makeup off pre-workout, wipe the bod down post-workout, and brush my hair. Wasn’t great, but got the job done! …but now it’s summer in Florida – afternoon workouts moved to morning workouts before work. Way too hot in the afternoon.

  4. I’m a lunchtime gym-goer and I definitely don’t have time to shower after but I don’t sweat very much either. I think I have this thing against public showers and I also hate having to carry around a semi-wet towel.

  5. We have a ridiculously small gym in my office building. Literally one treadmill, one bike, one elliptical machine and a set of dumbbells. It’s hilarious. I prefer my gym at home which is only 10 mins from me house and open 24/7. Perfect for super early workouts!
