Hi friends! I hope all the moms out there had a lovely Mother’s Day! Thanks for all that you do! 🙂
My Mother’s Day weekend was pretty perfect, although I didn’t get to see my mom since she’s currently relaxing in Italy. Lucky duck! I did get to see my stepmom and grandma though, which was a great alternative. Here are the highlights of my weekend!
After work on Friday I joined Fabio and Jack at the dog park. It was a lovely evening, and we enjoyed spending some time in the sunshine.

Once we got home, I made a big pot of coconut curry chicken soup from Cooking Light. It was a little hot out for soup, but we had all the ingredients on hand and I was craving some tasty Thai flavors.
The recipe was a big hit, and Fabio and I both gobbled up our bowls. Yum!
We wound up watching a couple of episodes from our latest favorite show, Turn, and then we were in bed by 10:30. It’s an exciting life I live, I tell ‘ya. 😉
On Saturday we were up relatively early so we could make it to our first OutRun of the season with Urban Athletic Club.
Like past OutRuns I’ve done, this workout had us running, jumping, and burpeeing all over DC. It was so much fun! More details to come! 🙂
After our tough and sweaty workout, Fabio and I split a sausage, egg and cheese sandwich on a jalepeno cheddar bagel from our favorite bagel place up the street, Brooklyn Bagel. We are really going to miss this place when we move!
The rest of our day was filled with lots of errand running, and then Fabio headed to the driving range with some friends while I whipped up some cupcakes to bring to my grandparents’ house for a Mother’s Day BBQ.
These cupcakes gave me the perfect excuse to bust out the new Kitchen Aid mixer that my aunt CC gave me (she recently got a new model for herself, and gave me her old one. Woohoo!!).
When I was younger, my mom and I did a lot of baking together and we always used her Kitchen Aid mixer. I never realized how amazing those mixers are until I moved out and didn’t have one anymore. They make such a difference!
Anyway, I wound up making these banana chocolate chip cupcakes with strawberry cream cheese frosting, and they were amazing!
A lot of times when I bake, I sub the brown sugar and/or butter for healthier alternatives, but it was kind of nice to enjoy a full-fat cupcake for this special occasion. This recipe is definitely a keeper!
By the time the cupcakes were ready, Fabio was back from the driving range and we headed over to my grandparents’ house to celebrate Mother’s Day with my stepmom and grandma. We wound up getting stuck in a TON of traffic (a truck had overturned on the bay bridge, turning our usual one-hour drive into a three-hour stop-and-go fiasco), but we made it to their house in time to catch a gorgeous sunset.
Obviously we took Jack with us for the evening, but we didn’t realize my dad was also bringing his black lab, Max. Combined with my grandparents’ black lab Cindy, we had a full on black lab party! As predicted, the dogs had an absolute blast running around in the backyard.
My sister and I had a great time throwing toys to the dogs, and just enjoying being out of the car (finally).
My grandpa wasted no time in making drinks for us after all the driving. Fabio and I each had an old fashioned which was delicious! We will have to practice recreating this drink at home.
A little while later we fired up the grill, and then sat down to a tasty steak dinner with corn, green beans, veggie/salmon kabobs, and baked potato.
Plus my cupcakes for dessert! Yum!
We spent the rest of the evening watching the Wizards game (my grandpa recorded it for us while we were all stuck in traffic – what a great win!!) and chatting. I loved getting to spend so much time with my family!
On Sunday morning, we leashed up all the dogs and took them for a swim in the bay!
This was definitely the highlight of their weekend – all three dogs were so happy!
Then we headed back to the house and gave all the dogs a nice bath with the hose. While they dried off, I sat in the sun and helped my sister with her cartwheels. She still needs some practice (lol) but she’s getting there!
A little while later, my dad, stepmom and sister had to leave for my sister’s lacrosse game, but Fabio and I decided to stick around and have Mother’s Day lunch with my grandparents. We wound up just heading up to their club house, where I ordered a crab cake sandwich and side salad.
Everything was delicious, and I had such a nice time talking with my grandparents. Too often when we see them we are all busy running around and talking to everyone else, and this was a really nice time to just sit and chat with them about everything. I always cherish moments like these, and I appreciate my grandparents so much. 🙂
After lunch, we drove back to Arlington and finished off the afternoon with laundry, meal planning, meal prep, and Game of Thrones. All in all, it was an excellent weekend!
