Phew, we made it to Friday. This week was a crazy one for me, as my annual conference for work is right around the corner. I actually leave for the conference in Los Angeles on Halloween (a Saturday – boo!) and I’m not sure what my posting schedule will look like during the week that I’m there. You know I’ll do my best to keep the posts coming, but with the hectic work schedule I might be posting less than usual. We will see!
Anyway, it’s Friday and you know what that means – it’s time to take a look at what made me smile this week! Feel free to play along in the comments below and tell me what you were loving this week. 🙂
For my birthday, my friend Claire gave me these adorable mugs for making Moscow Mules, and after a particularly tough day at work this week, Bartender Fabio whipped us up a batch.
Honestly I had no idea what a Moscow Mule was or what it would taste like prior to this, but it was delicious! I know Fabio made them with ginger beer, vodka, and lime juice, but I’m not sure if anything else went into them. After two of these I was in a MUCH better mood, if a little tipsy. 😉
Fabio and I actually had a lot of good meals this week (curried lamb meatballs, hummus chicken, stuffed shells) but my favorite was these fish tacos with peach relish from Cooking Light!
The fish was perfectly flaky and tender and the salsa was my favorite combination of spicy and sweet.
We both loved this dish, and although it was a little summery for late October, I wouldn’t be surprised if we have it again soon. Yum!
Sadly I only had two real workouts this week, as I wound up canceling one of my scheduled classes on ClassPass and paying the “skipped class” fee. Sigh.
As I mentioned, work has been super stressful lately and when the alarm went off at 5:00am and I realized I could get two more hours of sleep if I skipped my class, the decision seemed easy. People often talk about how important it is to let your body rest and recover, and I think it’s just as important to let your brain recover too. If you’ve been working extra hard and feeling stressed out, your sleep is even more important. I slept in and felt much better when the alarm went off again two hours later. You have to listen to your body!
Seriously, what a ham. We call him “bat dog” when he does this. 🙂
Jack found a new tennis ball during one of our evening walks this week, and he’s been obsessed with it ever since. I’m not sure why exactly, since he has about 8 other tennis balls in his toy basket (#spoiled), but I guess this new one is just the bees knees right now. (Do people actually say that? I think I have Friday brain…)
Woohoo – another birthday present put to use! My best friends from high school pooled their money to give me a $75 gift card to Washington’s Green Grocer, a local home delivery service of organic/local produce, dairy, grass-fed meat and more.
I received my first box this week and was so excited by the haul: sourdough bread, acorn squash, radishes, eggplant, apples, cabbage, sweet potatoes, and local romaine. Yay!
Now I’ll have to get creative with next week’s meal plan to see how I can use everything up. 🙂 Thanks, guys! You’re the best!
Cupcakes from a coworker during another super stressful day at work. ‘Nuff said.
Phew. Bring out the tissues for this touching video.
I <3 Ellen, and Martina McBride.
Alright friends, that’s all I have for you today! I hope you have an amazing weekend, and happy early birthday to two of my favorite people on the planet, FABIO AND CATRINA!!! Love you both so much. 🙂
Question of the day: Name one thing that made you smile this week.
