Spicy Chicken Sausage Jambalaya

This spicy chicken sausage jambalaya is healthy and filling! It is the perfect fall comfort dish.
  • 1 lb. lean chicken sausage
  • 1 onion
  • 2 bell peppers (green and red)
  • 2 cloves garlic
  • 1 can reduced-sodium chicken broth
  • ½ cup water
  • 1 can diced tomatoes
  • 1½ tsp. old bay
  • Dash of hot sauce
  • Pinch of red pepper flakes
  • 2 bay leaves
  • 1 cup brown rice
  • 2 large handfuls of spinach
  1. Chop chicken sausage into bite-size pieces and brown over medium heat in a large pot.
  2. Remove chicken from pot and set aside.
  3. Dice onions and peppers and cook in pot over medium heat until tender. Add minced garlic and stir.
  4. Add chicken broth, water, tomatoes, old bay, hot sauce, red pepper flakes, and bay leaves to the pot.
  5. Bring to a boil and add chicken back into pot.
  6. Add the rice.
  7. Lower heat to a simmer and cover the pot.
  8. Cook for about 30 minutes or until the rice is soft and has absorbed all the liquid.
  9. Add spinach and stir until wilted. Remove the bay leaves and serve.
