Because they are full of protein? Nah. Because they taste delicious on breakfast sandwiches? Hmm, not really. Because they get dyed for Easter? Ew, no. Hard boiled eggs are not my thang.

So then why I am so excited to tell you about my love for eggs? Well, Jenny F. over at Picky Palate joined up with Teflon brand for a twitter party tonight to celebrate Mother’s Day and National Egg Month. Jenny was offering these awesome prizes to four lucky winners who participated in the party. Since I was sitting around not doing anything at 8 pm anyway, I joined in the party, along with hundreds of other people I might add, and answered four questions about Mother’s Day. Toward the end of the Twitter party I figured I probably had zero chance of winning a prize, so I walked away from the computer for a few minutes. Imagine my surprise when I came back and saw this on my screen:


Excuse me?? Is that me? Out of all those people? Did I just win THE GRAND PRIZE?? Woohoooooo!! I was practically doing cartwheels around my apartment. Jack thought I was crazy. Clearly I was euphoric. In case you didn’t check out the details of the contest that I linked to above, the prize packages get progressively bigger so the fourth prize (which I won!) is the biggest! Awesome!!! You have no idea how badly I need a new skillet. Right now I switch between using a hand-me-down skillet from my grandparents and a random pan Fabio found when moving out of his frat house last year. Ew. I was seriously lacking in the pan department but won’t be anymore!!  I’m also really excited for the cookbook! I always love new recipe inspiration Smile Thank you so much to Jenny F. and Teflon for this amazing prize!

In other, much less exciting news…


My workout this morning was great, as usual. I am really loving this waking up early to workout thing! I have so much more energy and feel great all day. Plus I love that when I get home I can work out, but I don’t have to!

This morning I did another Insanity DVD after my jog with Jack. I chose another one of the tough month 2 DVDs, but today I only made it half way through the circuits. The one annoying thing about the month 2 DVDs is that they last an entire hour, as opposed to lasting just over 30 minutes like the month 1 workouts. Either way, half of a month 2 DVD after a mile run was enough for me!

When I got home from work today it was pretty rainy and gross out so there was no afternoon jog to the dog park today. I was secretly happy to lounge around and do some strength workouts, but someone  was really missing his jog.


Sorry Jack! Gotta wait til tomorrow!


Tonight Fabio went to dinner with some friends so I was up to my own devices. Whenever Fabio is out I usually gravitate toward my best salad ever, since I know salads aren’t his favorite. Tonight’s salad included the usual grilled chicken, chopped apple, craisins, walnuts, fat free feta cheese, baby spinach, and romaine lettuce. I used my favorite Kraft Greek Vinaigrette dressing and mixed everything up. It was scrumptious, as usual!



After dinner Fabio returned with some frozen yogurt which we split while watching Modern Family and reveling in my extraordinary luck for now having won two blog contests in one month. Knock on wood that this luck sticks around for a while! Yay!! Open-mouthed smile

Welcome to another What I Ate Wednesday post! In case you missed last week’s explanation of WIAW, each week Jenn over at Peas and Crayons posts about what she ate for an entire day. I really like the concept of WIAW because it allows me to keep track of what I’m eating on a typical day and spot bad habits before they become a problem. Example? Well if you look below you’ll see I did not have enough fruits & veggies in my day (dried prunes, cantaloupe, carrots, and broccoli just doesn’t cut it!) and there were too many processed foods (hello yellow cheese?). So, by monitoring what I eat throughout the day I can fix my habits as I go! Plus I get to join all the other food bloggers out there who link up on Peas and Crayons. Sounds like fun right? So, let’s get to it!

1. My day started out with one scrambled egg on top of a Thomas’ Light English Muffin. It was topped with reduced fat American cheese and I had 1 slice of turkey bacon on the side. This breakfast was a special treat because Fabio didn’t have to go into work until later and had time to make me a nice breakfast. It was delicious and definitely a step up from my usual cereal!

2. Lunch yesterday included a turkey sandwich with reduced fat American cheese and spicy mustard on an Arnold’s Sandwich Thin. Alongside my sandwich I had a few almonds, pretzel twists, and dried prunes for dessert. I eat this lunch almost every day and never get tired of it. It’s so good! If nothing else I really recommend the dried prunes (Sunsweet brand) because they are so soft and delicious. Plus prunes are “super fruits” so they’re packed with good-for-you nutrients!

3. For my afternoon snack I had fresh cantaloupe and green tea. At the grocery store last weekend I picked up a huge cantaloupe and Fabio painstakingly cut it up for me so I could take some to work all week 🙂 Thank God he’s around because I definitely can’t cut a cantaloupe myself…at least not without winding up in the ER 😉

4. I had some protein before my workout in the form of an apple cinnamon rice cake topped with peanut butter. This combination is sooooo delicious and I have it as a snack often. It’s perfect for keeping hunger at bay while I work out so I’m not so ravenous by the time dinner rolls around.

5. When dinner did roll around, I had roasted carrots and broccoli, quinoa with basil and sun-dried tomatoes, and boneless skinless chicken tenders cooked in some tomato sauce from Trader Joe’s. It was an awesome dinner!

And since I was up late finishing a blog post, I skipped dessert. I kinda love when that happens 🙂 Thank you, blog!

So, how do you guys keep track of what you eat? Do you use a food journal? Weight Watchers calculator? And how often do you track? When I was beginning my weight loss journey I used to count every single calorie for everything I ate. While I felt this was a good strategy in the beginning to learn what the right amount of food was for my body, eventually I learned how much to eat without tracking calories and now I stick to more of a once-a-week-check-in type thing, like this. What works for you??
